1/2 cup ground oatmeal
1/4 teaspoon garlic powder
1/2 teaspoon Gaylord Hauser-Spike Seasoning
1 pound orange roughy fillets
1/4 cup butter, melted
1 tablespoon chopped fresh parsley
1 tablespoon lemon juice to taste
Preheat oven to 400 degrees F. Coat a medium
baking dish with non-stick cooking spray. Mix garlic powder,
ground oatmeal, and Gaylord Hauser-Spike Seasoning in a
small bowl. Brush entire surface of each orange roughy fillets
with butter and lemon juice. Dredge in the oatmeal mixture.
Lay fillets in one layer in the baking dish. Sprinkle with
parsley and bake 10 to 15 minutes or until you can flake
the fish easily with a fork.
